Get the fall dinner baseBring a little autumn into an ordinary week
A seasonal meal plan does not have to turn every evening into a special occasion. Start with warm bowls, something from the oven, and ingredients that work in more than one dish. Add one weekend meal that feels a little slower.
This plan uses MenuDrop’s Vegetarian week as its five-dinner base, then adds an apple-and-yogurt brunch for four. You can open the complete dinner recipes in the planner and scale the dinners to your household. Brunch is a separate addition, with its quantities below, so remember to include it in your own grocery plan.
Five dinners to arrange around your week
The sweet potatoes need the most oven time. Put them on an evening with a little breathing room. Save soup for a night when a single pot fits the mood, and keep the wraps for when you want a different texture.
| Dinner | What is on the table | Planning note |
|---|---|---|
| 1 | Coconut chickpea curry and rice | Cook rice fresh; fold spinach into the curry near the end |
| 2 | Red lentil, carrot, and tomato soup with bread | Check stock, lentils, and the bread supply |
| 3 | Black bean stuffed sweet potatoes | Start the potatoes before making the filling |
| 4 | Lemon spinach and white bean rice | Keep a lemon for this meal |
| 5 | Roasted vegetable and hummus wraps | Buy enough hummus and tortillas for four |
The dinner grocery list for four
These are the amounts for the five dinner recipes, before pantry deductions. Canned-bean amounts are drained weights. Review your packages and the planner’s full recipes before shopping.
| Group | Total for the five dinners |
|---|---|
| Beans and tomatoes | 480 g drained chickpeas; 480 g drained black beans; 480 g drained white beans; 1.2 kg canned chopped tomatoes |
| Grains and bread | 600 g dry rice; 250 g dry red lentils; 8 tortillas; 8 slices bread |
| Vegetables and fruit | 350 g spinach; 600 g carrots; 400 g broccoli; 3 onions; 4 sweet potatoes; 1 lemon; 2 garlic cloves |
| Chilled and canned | 400 ml coconut milk; 120 g cheddar; 300 g hummus |
| Pantry | 1 litre vegetable stock; 7 tbsp olive oil; 2 tsp curry powder; 3 tsp cumin; 1½ tsp salt |
Weekend brunch: warm apples, yogurt, and toast
For four, add four medium apples, 600 g plain yogurt, four slices bread, 20 g butter, and one teaspoon cinnamon to your shopping list. One tablespoon honey is optional. If you are using honey, add it to the list rather than assuming it is already in the cupboard.
Core the apples and cut into small slices. Melt the butter in a skillet over medium heat, add the apples, cinnamon, and two tablespoons water, then cover and cook for about five minutes. Uncover and continue for another five to ten minutes, stirring, until the apples are tender; add a splash of water if the pan becomes dry. Toast the bread. Divide yogurt into four bowls and top with warm apples. Drizzle with the optional honey and serve with the toast.
This is a simple brunch base. If your table needs something more substantial, add another dish and include its ingredients in the plan. The planner’s dinner totals do not automatically include this brunch.
Prep by ingredient, cook by meal
Group the tins by dinner and count the rice, lentils, and tortillas. Check the vegetables before assigning nights. Wash and prepare produce as appropriate for when you will use it, and follow storage instructions for any prepared products.
You can reduce repeated chopping without cooking the entire week in advance. For example, set aside the onions for curry, soup, and wraps so one meal does not absorb the others’ supply. Cook rice when you make each dish. For any leftovers, follow the storage and reheating guidance linked below.
Give the season a role without buying a second pantry
The sweet potatoes and warm apples supply the autumn feeling. The soup, beans, grains, and vegetables carry the practical work of feeding people. You do not need a different specialty ingredient for every night.
Keep a favorite spice blend or side if it helps the plan fit your household, but write it into the menu. A change that exists only in your head will not appear on the grocery list. If you remove a meal, review the combined quantities and keep any shared ingredients needed by the remaining dishes.
Save the dinners, then add your weekend ritual
Open the Vegetarian week planner for the full dinner recipes and adjustable portions. Save a private copy when you are ready, then add brunch to your own menu or make it a separate weekend menu. If you are inviting friends, the dinner-party and Friendsgiving guides offer more detailed hosting plans.
After the week, keep the dinner that felt easiest and the brunch variation you want again. A seasonal collection becomes more valuable when you make it part of a routine you enjoy returning to.
